Fish Soup, Filipino Style

Don't let this recipe gross you out. It's awesome soup. Besides, the best meat on the fish is typically on the head.

Ingredients:

   1) 1 large tomato, chopped
   2) 1 medium onion, chopped
   3) 3 cups of water
   4) 2 tablespoons lemon juice, vinegar, or if available, tamarind soup base
     (available in oriental stores).
   5) 1 large fish head, cleaned, no scales or gills. Redfish & grouper heads are great!

Bring all ingredients except for fish head, to a boil. Then add fish head and simmer 10 minutes. Turn the fish head if it is not fully immersed in liquid, and simmer another 10 minutes. Remove head from soup and let cool. Then, pick out meat pieces from head and add this back to soup. Add salt and pepper to taste. If you like spicy stuff, add some jalepeno peppers.
